Tomato And Chilli Relish

This sauce goes the whole nine yards. You can make it as hot as you like — just subtract or add chillies to achieve your desired level. You can use it as a sauce for just about anything you like, and you’ll be surprised how fast you go through this sauce.

INGREDIENTS

2 brown onions
4  garlic cloves
1 small knob of ginger
2 red capsicum (peppers)
125 ml (4 fl oz/½ cup) olive oil
1 tablespoon sea salt
15 vine-ripened tomatoes
220 g (7¾ oz/1 cup) caster (superfine) sugar
175 g (6 oz) soft brown sugar
3 fruit's worth of  lemon juice 
2 cloves
1 cinnamon quill
8 small red bird’s eye chillies
